How to scramble Eggs

Method:
No Sweat Scrambled Eggs
  1. Break four eggs into a bowl and add a pinch of salt (and white or black pepper to taste) and 1 tablespoon of milk. Beat lightly with a fork
  2. Heat a small saucepan with a heavy base or a small non-stick pan, add 10 grams of butter and melt on medium heat
  3. Pour in the eggs and reduce heat slightly. Using a flat spoon or fork keep the egg moving and turning in the pan so nothing has contact with the hot surface for more than a few seconds
  4. When it begins to firm but is still slightly runny, remove from the heat. The residual heat in the pan will cook the eggs through
Tips & Hints:
  • For added flavour, stir a bit of your favourite creamy salad dressing, pesto, salsa or herbs into the egg mixture
  • Serve with smoked salmon, or your favourite side.

To make the softest yummiest scrambled eggs, use a dash of cream rather than milk and 2 minutes approximately in the microwave. Stop at the 1 min point stirring then microwave for another minute or maybe a little more but not much. Cleaning is so much easier from the microwave than a pot even a non-stick pan.
